Equipment

  • 1 Large pan or wok
  • 1 Saucepan (for boiling rice)
  • 1 Strainer (to drain rice)
  • 1 Knife (for chopping vegetables)
  • 1 Chopping board
  • 1 Spatula or cooking spoon
  • 1 Mixing bowl (optional, for prep)
  • 2 Measuring spoons and cups

Ingredients
  

  • 1 cup basmati rice or any long-grain rice
  • 4 cups water
  • ½ tsp salt
  • 1 tsp oil for cooking rice
  • 2 tbsp oil vegetable or sesame, for stir-fry
  • 2 garlic cloves finely chopped
  • 1 inch ginger finely chopped
  • ½ cup onion chopped
  • ½ cup carrot chopped
  • ½ cup capsicum chopped
  • ½ cup green beans chopped
  • ½ cup cabbage optional, chopped
  • ½ cup spring onions chopped
  • ½ tsp turmeric powder
  • 1 tsp cumin powder
  • ½ tsp black pepper powder
  • 1 tbsp vinegar
  • 2 tbsp soy sauce
  • ½ tsp salt adjust to taste
  • 1 tsp lemon juice optional
  • 2 tbsp coriander leaves chopped (for garnish)

Instructions
 

  • Rinse the basmati rice 2–3 times until water runs clear.
  • Boil 4 cups of water with salt and 1 tsp oil.
  • Add the rice and cook the rice until 90% done. Drain and cool it completely.
  • Heat 2 tbsp oil in a wok or large pan.
  • Add chopped garlic and ginger; sauté for a few seconds.
  • Add carrots and beans. Stir-fry for 2 minutes.
  • Add capsicum, cabbage, spring onions, and onion. Stir-fry on high heat for 1-2 minutes.
  • Add the cooled rice to the stir-fried vegetables. Gently mix without breaking the grains.
  • Add vinegar, soy sauce, turmeric, cumin powder, pepper, and salt.
  • Stir the rice and spices well and cook everything for 2-3 minutes to combine flavors. Turn off the heat.
  • Add lemon juice and coriander leaves on top of fried rice. Toss well and serve Veg Fried Rice with raita, curd, or curry.

Notes

  • Always use cooled or leftover rice for making fried rice recipe.
  • Customize with green peas, paneer cubes, or roasted peanuts.
  • Cook on high heat to keep veggies crisp.
  • For extra flavor, add a dash of chili sauce or a pinch of garam masala on top.
